The Grange, The Hotchkiss School | Lakeville, Connecticut
Housing the school’s Fairfield Farm to Table program, which provides immersion in nature and instills responsibility for natural resources, the building allows the students to actively participate in growing, storing, and producing 50% of the food served in the dining hall. The building also embodies the goals of the school’s environmental initiatives by keeping environmental sustainability at the forefront of the students’ work while also taking advantage of the site’s innate beauty. A vegetable washing stand flanks the loading area, from which produce is processed and stored in earth cooled root cellars until prepared in the prep kitchen and classroom. Designed to handle classes of 16 with a newly interpreted harkness table, the prep kitchen allows students to learn technique and healthy recipes. From the kitchen, the building opens onto a spacious, multi-purpose porch, which acts as a classroom, place to dine, as well as an impromptu stage for concerts.
